What is it about?

Aflatoxins (AFs) are a group of toxic, nephrotoxic, hepatotoxic and carcinogenic fungal metabolites. Heat- and acid-treated yeasts, probiotic bacteria and their combination were used to remove AFB1, AFB2, AFG1 and AFG2 from human and animal food.

Why is it important?

Aflatoxins (AFs) are a group of toxic, mutagenic, teratogenic and carcinogenic fungalmetabolites. They are secondary metabolites produced mainly by Aspergillus flavus and Aspergillus parasiticus. About 20 types of different aflatoxins are currently known, and they classified into AFB1, AFB2, AFG1 and AFG2, as well as AFM1 and AFM2, as metabolites in the serum of animals and humans. AFB1 is the most toxic AF and is a common contaminant of many foods, representing around 75% of AF-contaminated food; it is a recognized mutagen and carcinogen in humans.4,5 Growth and production suppression, immune suppression and liver enzyme disorders are the most common symptoms resulting from AF contamination.

Perspectives

It can be concluded that probiotic–yeast cocktail is one of the best methods for use in aflatoxin elimination in the human food,especially babies.An important finding in this study is that aflatoxins are hazardous not only to adults but also affect babies when they feed on mother’s milk contaminated with aflatoxin.
