What is it about?

The golden berry is a fruit with numerous health benefits and is a source of bio active molecules. This study compared dried golden berry fruits powder with the use of plant byproducts (wheat bran and golden berry peels) to improve biscuit safety. The novel golden berry biscuits looked like the traditional biscuits in color and sensory characteristics but had excellent baking, textural and rheological properties. The golden berry fruits exhibited the best antimicrobial and anti fungal properties and showed acceptable inhibition of toxigenic fungi and mycotoxin production. On the basis of these results, it is recommended that use of the dried golden berry fruits powder materials be used as food preservatives and food additives to increase the safety and shelf life of food products.
