What is it about?
In this paper more than one hundred eggs from Campania region (Italy) were analyzed by using a new GC-FID procedure. We found that the average content was 175 mg/egg, a result very different from previous result of 275 mg/egg reported in literature.

Why is it important?
It is important because on the basis of the new results for cholesterol content of eggs it is possible to eat two eggs a day without increasing CVD risk.
