In this study, the varieties of alcoholic beverages from watermelon; watermelon-banana and watermelon-pineapple mixtures were produced by using monoculture and mixed culture fermentation techniques.

Why is it important?

As the results obtained from the present study indicated that monoculture-fermented beverages were of better quality as compared to the mixed culture fermented ones.

Perspectives

Based on the data obtained, in my opinion, the monoculture-fermented beverage from watermelon-pineapple mixture has been noticed to be ranked as the best alcoholic beverage based on sensory evaluation score.
