Fumonisins are mycotoxins often occurring in maize. Due to their chemical properties, they can interact with other maize components, with a tremendous effect on analysis. Our review is a comprehensive state of the art of the issue, from the accumulation in the field to the analytical implication. Maize processing is covered as well.

Why is it important?
Climate change will strongly affect mycotoxin occurrence in the next years. Besides aflatoxins, fumonisins will become a real issue in the Mediterranean area. In addition, the use of maize for food production is increasing, due to new trend towards gluten-free products. Therefore, this review is of great interest for the community.
