This work discuss about novel extraction methods with innovative technology .Main goal of research is to discuss green and sustainable methods for the production of safe, nutritious and chemical free functional foods and nutraceuticals from herbs and spices.Innovative extraction and identification techniques contribute to addressing SDG-3 (Good Health and well being),SDG-9 (Industry,Innovation and Infrastructure),SDG-12 (Responsible consumption and production) and SDG-15 (Life on land) which may contribute towards sustainable well-being

Why is it important?

There is a remarkable increment worldwide in demand for herbs,nutraceuticals and functional foods after COVID-19 .We find out that quality of any herbal product or food supplement depends upon type of extraction and identification techniques.Traditional methods for extraction of active constituents of herbs and spices may lead to wastage of organic solvents increasing production cost.These issues can be resolved by the use of novel, green and sustainable extraction techniques.

Perspectives

Food technology innovation is very important in current situation.Food safety and quality are affected by innovative technologies.Specific attention is required for the safety of food products involving herbs and spices because herbs possess medicinal properties and provide aroma to food product.
