What is it about?
Xanthan gum has many industries due to its unique rheological behavior. One way to reduce the cost is to use cheaper alternative substrates, like oxidized biodiesel by a fermentation process to reduce costs of its commercial production. Thus, soybean biodiesel is an alternative substrate for non-food grade xanthan gum biosynthesis.
