What is it about?

The health risks associated with the consumption of low-quality seafood makes the assessment and control of food safetyand qualityanother topic of global concern in aquaculture. Microbiological controls have to be addressed firstly to the environments designated to mariculture, to adequate fish-farm management practices and finally to educational programmes for the consumers

Why is it important?

The study underlines that the achievement of good quality levels in aquaculture strongly depends on the conformity of the rearing environment to qualitative microbiological standards, highlighting the importance of sanitary controls along the di¡erent steps of the productive cycle.

Perspectives

This study - considering both the production environment and the final products -confirms that good fish-farm management practices may control many of the potential hazards at the production level and consequently reduce the risks of outbreaks of human and fish diseases.
