What is it about?
The detection of sulfite in white wine is possible using a fluorescent dye based on the popular BODIPY unit. The sensor also responds to long term exposure of a water solution to sulfite by a secondary fluorescence response.

Why is it important?
The secondary fluorescence response of our probe to sulfite is rather unique and opens the door to producing a new kind of detection system for monitoring early and late exposure of water to the anion.
