What is it about?

The chapter provides an overview of prevalent consumer food choice models that are used to describe and predict consumer demand. The Engel-Blackwell-Miniard model, a Stimulus-Organism- Response model as well as Grunert's Total Food Quality Model describe relevant factors that influence food choices.

Why is it important?

I discuss current theoretical challenges and contemporary developments regarding the clean label trend. Labels such as “healthy,” “free from artificial additives,” and “organic agriculture” have gained increasing importance for consumers, strongly influence buying decisions, and are consequently of importance to marketing managers.

Perspectives

Food choices are complex and an interdisciplinary research framework with essential factors that influence food choices is discussed. How can theoretical models be improved to better understand and predict food choices?
