Why is it important?

It is important because it can solve the environmental issues of potato peels wastes. In addition, tannase has many applications in food and pharmaceutical industries.

Perspectives

I hope to apply the findings of this article in the recycling of potato peels in the production of value-added product (tannase). In addition, tannase of the isolated tannase-producing fungi has many important features such as high production, thermal stability and low molecular weight. Therefore, it can be applied to remove tannins from different tannin containing beverages such as tea, and to produce gallic acid for pharmaceutical applications.
