What is it about?

Jammed emulsions containing pea proteins are tuned to 3D printable material by pH adjustment. The pH trigger drives formation of protein particles, that stick oil droplets together leading to 3D printable emulsions

Why is it important?

Traditionally, to impart 3D printable material properties, chemical cross-linking and crystallin nano-particles might be required. Whereas, in our approach, we use pea proteins and a simple pH trigger, and no cross-linking is required to impart 3D printable properties.
